  • 4g Mochiko Sweet Rice Flour
  • 3g Toasted Rye Flour
  • 1g VWG
  • 36g Water
    Can increase this to 38 or 40 if you want an easier time but 36% is a pretty good hydration
  • 1g Salt
  • 1g Kansui Powder Type 2
  • Pinch of Riboflavin
    Optional. For color.
