- 4g Mochiko Sweet Rice Flour
- 3g Toasted Rye Flour
- 1g VWG
- 36g WaterCan increase this to 38 or 40 if you want an easier time but 36% is a pretty good hydration
- 1g Salt
- 1g Kansui Powder Type 2
- Pinch of RiboflavinOptional. For color.
