Black Hen Chintan

This is our main chintan for various ramen dishes. It is crystal clear with a golden touch. Old french hen (sometimes we also use black breed hen) has this great chickeny aroma and flavor that we want to see in the very fundomental of ramen. It, in my opinion, gives this "hearty" feeling.

Ingredients

  • 7kg Black Hen Label Rouge
    Can substitute with old hens, not necessairly french. Latvia is quite poor in diversity of poultry offers. Thus we are buying this at quite high costs from abroad.
  • 14l Water
