Premium Shōyu Tare
I will say it like that. If you don't have Shiro Shoyu - don't substitute and don't go for this recipe. It is exteremely delicate and shiro shoyu is a star of this recipe.

Ingredients
- 1500ml Shiro ShoyuThere are various options here depending on your residence. In Latvia we only had 2 options unfortunately.
- 60g Dried shiitake mushrooms
- 60g Kombu
- 450ml Sake
- 50g MSG
- 450ml Mirin
- 300ml Higashimaru Shoyu
- 150ml Chinese dark soy sauce
- 150ml "Fancy" Kikkoman soy sauceWe've got to use this for sponsorship purposes, but it is okay. Can substitute with something like Yamasa standard soy or one of the premium segments.
